Indio Viejo & Gallo Pinto

In honor of National Hispanic Heritage month, we have partnered with our AmigoZ employee resource group to highlight a few recipes these cultures bring to us. To kick it off, please check out this traditional Nicaraguan dish, Indio Viejo & Gallo Pinto. Simple yet rich in flavors, Indio Viejo is a stew made with vegetables, water drenched tortillas and shredded beef. Gallo pinto is a mixture of rice and beans which is considered a national symbol as most Nicaraguans eat the dish daily. When all of these components are combined, it results in a creation of this hearty and delicious stew.
